Monday's Meal

In case you haven't realized it, I really love Southern food. There's really nothing better than the stick to your rib perfection of good fried chicken. Growing up in Texas it was easy to find chicken fried chicken on many menus. Here's a quick delicious version for you to try at home. Eat up!


Chicken fried chicken
30 saltine crackers
1/4 cup all-purpose flour
2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
2 eggs
1/4 cup vegetable oil
1 whole chicken, cut up


Heat oil in a large skillet over medium heat.
Place crackers in a large resealable plastic bag; crush the crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well. Beat eggs in a bowl; heat oil in a large skillet over medium heat.
Dredge chicken pieces in eggs one at a time, then place in bag with crumb mixture, shake to coat well. Place chicken in skillet, assuring that pieces don't touch, cook for 20-30 minutes, turning frequently, until golden brown and juices run clear.
