Monday's Meal

You may recall me mentioning that I have quite a bit of chicken in my freezer? Well I'm working through it as quickly as I can. Here's a quick one to cook up for your crew.

Swiss Chicken Tenderlion Strips

1 package of chicken tenderloins
1/2 tsp of salt
1/4 tsp of pepper
3 tbsp of olive oil
1 tsp of minced garlic
2 tbsp of lour
1 cup of chicken broth
1/2 cup of dry white wine
3 cups of shredded Swiss cheese

In a skillet heat your oil over medium heat. Season the chicken with the salt and pepper. Saute the chicken until no longer pink, 5-7 mins approximately. Remove and set aside to drain. Next add the garlic to the skillet and saute it until tender. Stir in the flour, the broth and wine making sure they are well blended. Bring to a boil over a medium heat, cook until thickened. Reduce heat to low. Add Swiss cheese gradually, cooking and stirring constantly until it is completely melted. Make sure the sauce is well blended. Add the chicken back to the skillet and warm through.

You can serve this over rice, potatoes or a bed of fresh greens such as spinach. Eat up!

Why can't you live closer? I don't want to cook these lovely dishes as much as enjoy them -with- you! yum!
