Monday's meal

Well...more of a dessert really, but who doesn't love a good dessert and chocolate even so you can't resist.

Flourless Chocolate Torte

4 oz of fine quality 100% dark and semi-sweet chocolate
1 stick of unsalted butter
3/4 cup sugar
3 large eggs
1/2 cup of unsweetened cocoa powder

Preheat oven to 375 degrees. Butter an 8 inch round baking pan around the edges and line the bottom with buttered wax paper.
Chop the chocolate into small pieces. Use a double boiler or a metal boil over a saucepan. Gently melt the chocolate and butter. Stir until smooth. Remove from double boiler. Whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until well combined. Pour batter into pan, place in the middle of your oven and bake for 25 minutes or until top has formed a firm crust. Cool and sprinkle with a dusting of cocoa powder. Serve topped with fresh whipped cream and berries. Delish!
